Amount
Breakfast sausage, cooked
1 lb
Tater tots
1 bag (32 oz)
Cream of chicken soup
2 cans
Sour cream
1 cup
Butter, melted in the baking dish
1 stick
Grated cheddar
1 cup, plus extra for the top
Method
Put the stick of butter in the 9x12 casserole dish and melt it in the oven while it preheats to 400 F.
In a large bowl, mix the cooked sausage, tater tots, cream of chicken soup, sour cream, and grated cheddar. The butter stays in the dish and is not part of the mix.
Spread the mixture into the buttered dish.
Bake at 400 F for about 45 minutes.
Right before it finishes, cover the top with a good layer of cheddar and return it to the oven just long enough to melt the cheese.
Notes
Melting the butter in the dish coats the bottom and keeps the tots from sticking.
Cook and drain the sausage before mixing so the casserole does not turn greasy.
Add the cheese topping near the end of baking so it melts without browning too far.
